The Fair was inspired by the similar Andalusian fairs and aesthetics with recreational activities, and included musical and dance performances by the Centro de Arte Flamenco in Hong Kong. The traditional costumes "traje corto" (short jacket, tight trousers and boots) for men and the "faralaes" or "trajes de flamenca" (flamenco style dress) for women were great interests of the fair.
About 80 percent of attendees are local residents, mostly hospitality professionals like chefs associations, schools, restaurant owners or companies, media and citizens of Hong Kong or final consumers.
